Healthy Fat Balls

Ever get to 3pm and start looking around for a snack? Well look no further than these super satisfying Fat Balls!

Fat balls are made using a combination of nuts, seeds and coconut. It’s these tasty healthy fats that will keep you feeling fuller longer and help you power through your afternoon without making any extra trips back to the kitchen looking for more snacks!

Keep some fat balls in your freezer at home and/or work, so you always have a healthy and satisfying snack readily available.

Makes 20 fat balls

Ingredients
1 cup walnuts + extra for rolling
1/2 cup nut butter (e.g. peanut, almond, cashew)
1/2 cup hemp seedsΒ + extra for rolling
1/2 cup coconut shreds + extra for rolling
1/2 cup chia seeds
1/4 cup cacao nibs
1/4 cup maple syrup or 4 medjool dates
1/4 cup coconut oil, melted
2 tablespoons maca powder
1 1/2 teaspoons cinnamon
Pinch of salt
Beet powder for rolling (optional)

Instructions
1. Place all ingredients into a high powered blender and blend until smooth and creamy. If needed, add a splash of plant milk to get things moving.

2. Add extra walnuts, hemp seeds and coconut to three bowls. Form the fat ball mixture into 20 evenly sized balls, then alternate rolling in the walnut, hemp, coconut and beet powder. Place in an airtight container (single layer) and store in the freezer until ready to eat.

3. Remove from freezer a couple of minutes before you want to eat. Enjoy!
