Springtime is all about beautiful fresh fruits and vegetables, and one of my favorite spring fruits is sweet and juicy strawberries! So I’m making the most of the season by adding them to all my smoothies and breakfast bowls at the moment!
In this recipe I blend sweet strawberries, pineapple and creamy coconut milk together. The outcome is pure bliss.
1 cup coconut milk*
1 cup fresh strawberries,washed and stems removed
1 cup fresh or frozen pineapple chunks
1 scoop vanilla plant based protein powder (optional)
Handful of ice
1. Put all ingredients into a high powered blender and blend until smooth and creamy. Enjoy!
*There are many types of coconut milk available to purchase. The type I like to use for smoothies is from the refrigerated section and is sometimes called coconut beverage. If you prefer you can use canned coconut milk, but I’d suggest the fat reduced version as the regular canned coconut milk can be very rich.
